Yes, it is eggplant. I made my 1st successful eggplant dish with this baby. Jon likes baba ganoush, but I made a vegan version of eggplant parmesan. The eggplant was sliced and baked (no mush) with a to-die-for marinara that Jon made from garden tomatoes. That's really what made the dish.

Is that an eggplant? I can never seem to get eggplant to turn into anything other than slime when I cook the things.
